A differential is a device that allows one input to drive two outputs at differing speeds. It means that when you need to send power from the engine to the wheels and you are travelling around a curve, one wheel can turn faster than the other while they both receive engine power.
A spool or locked differential means your wheels could not turn at different speeds. It means that the inside wheel is dragged along and not only can adversely affect tire wear but can also wreak havoc with vehicle dynamics and parts loadings.

For passenger cars and on-road use, a standard or "open" differential works just fine. But for off-road and performance applications, an open differential has a major downside.
When a wheel loses traction and its coefficient of friction drops, an open differential will actually tend to send all the force to that wheel, further worsening the problem. If you are stuck in the mud or trying to put 500 horsepower to the ground, coming out of a corner is going to be inconvenient.
